SALMON WITH BLACK GARLIC GLAZE

INGREDIENTS (serves 2)

  • 600g salmon fillet

  • 8 tablespoons soy sauce

  • 6 tablespoons brown sugar

  • 8 tablespoons olive oil

  • 6 black garlic cloves

  • 1 tablespoon lemon juice

  • 2 tablespoon of fresh grated ginger

  • 1 tablespoon of grated lemon grass

  • Zest of 1 lemon

  • salt & pepper to taste

  • 200 gr White rice

  • 200 gr green peas

  • 200 gr spinach

 

INSTRUCTIONS

  1. Season salmon with salt & pepper.

  2. Cut the garlic rough and add to a blender with the soy, brown sugar, 4 tablespoons olive oil, lemon juice, ginger, lemon grass, zest and salt and pepper.

  3. Place your salmon in the pan with the black garlic sauce and fry for about 8-10 minutes (or to your liking), coating it with the sauce during cooking. You can use a lid to speed the process of cooking up.

  4. Meanwhile, cook the rice and add the peas for the last 3 minutes.

  5. Sauté the spinish to taste.
